Product notes
The rains of early spring 2018 filled the reservoirs and gave the vines enough water for the growing season. Although the bud break and flowering were a little late, the season began under ideal weather conditions, which resulted in excellent fruit setting and a generous harvest. The sunshine throughout the summer was tempered by the cool breezes and fog of the area, which ensured a slow and steady maturation for a perfect balance between the freshness conserved and the maximum development of the flavors.
Production notes
The grapes were harvested by hand in the freshness of the morning and pressed into whole bunches, minimizing the contact with the skin, in order to preserve the freshness and radiance of the flavors. All the juice was fermented in cask for more richness and complexity, with 5% in new French oak for texture and complexity. The new wine was aged for six months in 60-gallon French oak barrels, on yeast lees, and stirred by hand twice a month to obtain a creamy texture and perfect integration of flavors. The addition of a small percentage of semillon gives the final mixture a greater breadth in the mouth and a greater complexity. Bottling took place in April 2019.
