Product notes

Grilled tempeh, green beans and shiitake broth; braised beef cheek pappardelle with bacon and mushrooms with tomato stew; traditional raclette with herbs, baby potatoes, grilled moose sausage, pickles and old-fashioned mustard; New York Classic Pepper Striploin; firm cheese such as pecorino or aged blue Somerset cheddar.

Production notes

The year 2014 began with seasonal bud break at the end of April and slightly warmer than average weather conditions in May and June. The ideal time during flowering was followed by higher than average heat at the end of July, which advanced veraison by two to three days. Cooler temperatures at the end of August, in addition to still good ripening conditions in September and October, allowed the fruit to ripen perfectly until full phenolic and gustative maturity in all grape varieties

Tasting notes

The aromas of black pepper and Provençal sausage are supported by intense notes of black cherries and gooseberries. Structured and dense, its balanced and full-bodied taste presents harmonious fruits, chocolate, cloves and a slight note of mint. The tannins are fine and supple while the finish is long and pronounced.
